What is GOURMEY's mission? 🚀
👉 GOURMEY is the pioneering project of cultivated meat in France. Our mission is to accelerate the transition towards a meat that is more respectful of the planet, of human beings and of animals. To do so, we produce meat from natural animal cells. We are currently working to develop a foie gras without force-feeding or slaughter – delicious and 100% ethical.
When will your foie gras without force-feeding be marketed? 📅
👉 We are at the beginning of our research and development phase. We still have many challenges ahead of us and we do not wish to commit to a specific date for now. Our goal is to offer a delicious foie gras without force-feeding that will delight the finest gourmets by 2023 or 2024
How will you produce your foie gras? 🍽
👉 It all starts with a freshly laid egg by the most beautiful duck, from which we take some cells.
We place these cells directly into a perfect environment where we give them all the basic nutrients they need, the same nutrients that are found in a duck’s natural diet of oats, corn or grass. The cells have everything required and do what they do best: grow, just as they would have done if the duck was growing.
We then adjust the nutrients and slightly increase the level of good fats to obtain real duck foie gras that can then be cooked, seasoned and eaten.
Where do the cells you use to make your foie gras come from? 🦆
👉 It is very important to us that our process does not have a negative impact on animals. That is why we have chosen to take cells directly from a freshly laid duck egg. And we won’t need hundreds of eggs, just one will suffice because the cells naturally retain the ability to grow as long as they have the simple nutrients they need!
What do you "feed" the cells with? 🌿
👉 We give cells the most basic nutrients they need. The same nutrients that are found in a duck’s natural diet of oats, corn or grass. These are proteins, fats and vitamins. Of course, no potentially toxic product for consumption will enter our manufacturing process!
Do you need animal products such as bovine serum to produce your foie gras? 🐮
👉 No, we do not use bovine serum or other animal products to produce our foie gras.
Do you use antibiotics or palm oil? 👩🍳
👉 No, our foie gras will be produced without antibiotics or palm oil. We use natural duck cells that simply grow because we offer them the ideal environment with the basic nutrients they need.
Are you thinking of developing other products after foie gras? 🍔
👉 Yes. Foie gras is only the beginning of our story. To address the impact of large-scale meat production on the environment, we will have to go further. We’re thinking about a duck burger, for example! 😋
What are the advantages of this method of production? 🌍
👉 Today’s large-scale meat production has a huge negative impact on the environment, human and animal health. This new production method makes it possible to obtain delicious and healthy meat while considerably reducing this negative impact.
It is estimated that producing meat directly from cells will require 90% less water and arable land (such a large amount of land could be used to feed people or to fight against climate change thanks to reforestation). And meat production can be 100% local, directly in cities for example.
Finally, the production of cultivated meat makes it possible to limit the health risks linked to industrial livestock farming, which is the source of nearly half of the world’s antibiotic consumption and increase the risk of epidemics (mad cow disease, bird flu, swine flu, etc.).
